Maple Syrup Acorn Squash Casserole

Thanksgiving is approaching quickly here in Canada: we celebrate it in one week, October 8th, while our American neighbours celebrate it November 22nd!


I love Thanksgiving! It’s such a wonderful time to get together with family and friends, celebrate with a wonderful meal and share the bounty of local harvests.

Today I am sharing a traditional family recipe that we make every Thanksgiving (as well as Christmas Day!)…Maple Syrup Acorn Squash Casserole.

Maple Syrup Acorn Squash Casserole from Setting for Four

This recipe pairs extremely well with turkey.  It’s so yummy, the touch of maple syrup really kicks it up a notch!  It smells heavenly while it’s cooking and is terrific when reheated with leftovers the next day!

Ingredients:

3 acorn squash, washed and sliced in half.
1 tsp. butter for each squash half
1/8th tsp. cinnamon for each squash half
pinch nutmeg for each squash half
1 tsp. brown sugar
3 tbsp. maple syrup
Black pepper
Pumpkin seeds to garnish.

Instructions:

Preheat oven to 425 degrees F.
Wash acorn squash and cut in half with sharp knife.  Scoop out seeds.
Turn each squash half upside down on baking sheet or baking dish and cook in oven for 20 minutes.
Remove from oven, turn squash halves right-side up and add butter, cinnamon, nutmeg and brown sugar to each half in the amounts given above.
Cook at 425 degrees F for another 10 minutes or until squash is tender.
Remove from oven and let squash cool slightly.  Scoop out flesh into a medium bowl
Using fork or potato masher smash together the squash, butter, spices.
Add maple syrup.
Add black pepper as desired.
Mix all ingredients together.
Spoon into a greased casserole dish and cover with lid or tinfoil.
Cook at 425 F. for additional 20  minutes.
(Recipe may be made up ahead up to this point and refrigerated. Reheat in oven 10 minutes longer.)
Garnish with pumpkin seeds if desired.

Serve and enjoy!

    oops I hit publish too soon.
    Our family loves Acorn Squash, cooked upright with butter and cinnamon and then when it is done we add brown sugar and eat it right out of the squash half so I know we would love this too.

      I’ve made it like that too CHeri!! THis recipe is a slight variation of that, with a hint of maple syrup sweetness and cinnamon – Yum!
