I love banana bread!! There are so many versions and they are all good! This one is special because…this is my husband’s recipe! Trail Mix Banana Bread….Mmmmmm!!
It’s moist and hearty and full of yummy nuts, seeds, cranberries, chocolate and coconut!
So cheer him on everyone, because he is letting me share his awesome, quick and easy recipe with you today!
Ingredients:
1 and 3/4 cup flour
2/3 cup sugar
2 eggs
2 tbsp milk
1 tsp baking powder
1/2 tsp baking soda
1/3 cup shortening
3 super-ripe bananas…yes ‘super-ripe’….hubby’s term!!
Trail Mix stuff added by the handful, cause that’s how you eat Trail Mix!:
Crushed walnuts
Dried Cranberries
Semi-sweet chocolate chips
Shredded coconut
Pumpkin seeds
{Time-saving tip: Measure out all the dry ingredients into a ziplock bag (flour, sugar, baking powder and baking soda). With a marker label the ziplock bag ‘Trail Mix Banana Bread’ and store in your pantry. Make several of these ziploc dry mixes in advance. Next time you want to make this recipe, take one of the ziploc bags, dump in a bowl and just add the wet ingredients and nuts ect. for a preparation shortcut!}
Make:
Mix all ingredients in a bowl.
Pour into loaf pan.
Bake at 350 degrees F. for 50-60 minutes.
With toothpick check to make sure center is cooked.
Remove loaf from pan and cool on wire rack.
Eat!!!
Doesn’t my hubby’s recipe look yummy? And it smells so good while it’s baking!
