A perfectly moist and delicious banana bread with loads of yummy banana and a touch of maple syrup!

Ingredients
1 3/4cupsall-purpose flour
1 1/4teaspoonbaking powder
1/2teaspoonbaking soda
2/3cupsugar
2tablespoonsmaple syrup
1/3cupshortening
2eggs
1cupmashed ripe bananas
1/4cupdried apple rings cut into small pieces
1/4cupchopped pecans or other types of nuts
Instructions
Stir together flour, baking powder and baking soda.
Set aside.
In a bowl beat sugar and shortening until combined. Add eggs one at a time and the maple syrup beating till smooth. Add flour mixture and banana alternately to creamed mixture. Beat smooth after each addition. Add dried apple and nuts.
Add batter to lightly greased mini loaf pan. Bake in 350 degrees F oven for 40 minutes or until a wooden toothpick inserted comes out clean. Cool in pan 10 minutes then remove.
Notes
Omit pecans if desired. *If baking in a single loaf pan - cook for 60 minutes in 350 degree F oven.
